I have a bit more bandwidth now to start rotating meals, but I want to do it from a point where the potatoes are already cooked and ready to mash.
Benefits Iβve experienced, where potatoes as a base may have helped:
Iβve been curious about my fruit-based dessertsβhow sweet strawberries are, especially now combined with banana. (It makes me think Iβd probably really enjoy a strawberry-banana smoothie.) Iβve noticed moments of emotional stability. Having this root vegetable as a base might have contributed. Itβs budget-friendly, childhood-friendly and takes the least amount of energy and time to switch things up, starting from already cooked potatoes.
So I want to start varying meals based on cooked potatoes. Iβll continue with stamppot-inspired portions and start adding servings of carrot and onion with slavinkβkind of hutspot-inspired.
I usually already have white yellow π onions at home because I eat tutu on Sundays, and I assume carrots are budget-friendly. Maybe Iβll use fresh ones, or go for vegetables in jars.
When I think about jarred vegetablesβwhich last long and are often relatively cheapβspinach comes to mind.
So maybe, as a third base variation (though Iβm still unsure if this will definitely be the third option), mashed potatoes with spinach and a meatball.
Ideally, Iβd love to have five base variations during the week (Monday to Friday). This is kind of the next step: but instead of juggling all three dishes at once, Iβll first add the hutspot-inspired one with slavink as the next variation.
Besides these two base variations, Iβd also like to explore how to make meatballs Iβd enjoy. I want to experiment with thatβmaybe as a sideβand if I end up liking them a lot, I could add them to a third variation:
Mashed potatoes, spinach, and meatballs.
So for the upcoming month, itβs stamppot and hutspot for nowβand if I have the courage and energy, Iβll try learning how to make meatballs and gravy. Maybe there are some helpful resources out there that can guide me through the entire process.
