I took a step today to prepare for the light fasting I do on Mondays and Tuesdays. I chopped tomatoes and fresh spicy pepper and boiled two eggs, which I put in the fridge. The only thing I need to add are the other ingredients that I don’t necessarily need to chop, except if I’m home; then I might like to add some chopped red onion. And for dessert, tangerines on both days. I make this salad instead of making tomato soup, baking sweet potato quiche and beetroot quiche and making baked apple cinnamon bites (my winter schedule). Making this salad with tangerines for dessert saves a lot of time, energy, and helps me stay cool during the warmer season.

I might add soup as a starter for this season as well, but first, I need to explore this salad recipe more.

Now I have more of an idea for a salad, and the one I’m making now closely resembles it! I have already tried variations of it a few times in the last few weeks. So I wrote down a draft of this recipe, and despite my inner critical voice I hear loudly,

I feel a bit proud of myself for taking yet another step.
