It is a privilege that I get to try and create something beautiful in this country with the dishes I was raised on from a young age. An abundance of places to choose from, allowing me to tailor it more to my taste each day. A butcher shop here, a cheese store there. Fresh, fresh, fresh, and let’s not forget the countless supermarkets to make my plate pleasantly satisfying. It brings a sense of home to me, far away from the island where I was born. I live in a prosperous country where I can safely stand in the shower, reflecting on the opportunity I’ve been given today to create something beautiful. I feel increasingly worthy of meeting my – basic – needs. There is a place for my meal at the table, I get to create as well. Knowing there’s a place at the table for my dish brings me peace and satisfaction. Yes, I love Holland. Beautiful country.
